Our Story
For Martin, the restaurant business has never just been a career. It is part of his family story.
His family's roots in the Wichita-area restaurant community run deep. In 1993, his parents opened Casa Martinez in Derby, Kansas, building a foundation rooted in their passion for great food, family, and genuine hospitality.
It was there that Martin grew up surrounded by the restaurant business, learning the traditions, flavors, and dedication that would eventually inspire his own culinary journey.
As he got older, Martin began carving out his own path. He pursued culinary training and worked in fine dining, gaining experience with techniques and ingredients that went beyond the kitchens he grew up in.
Eventually, those two worlds came together: family tradition and culinary training; Hispanic roots and fine-dining technique. That combination became the foundation for Martin's vision for Empire Tacos.
Martin found the perfect home for that vision in downtown Mulvane. He purchased the historic former hotel on Main Street, a building dating back to around 1900, and began transforming it into a restaurant while preserving the character that had survived for generations.
That history is still around you when you visit. Look at the old bricks and you can still find writing left behind from years past. Look up and you can see where the old staircase once carried hotel guests upstairs to their rooms.
More than a century ago, people walked through these doors looking for a place to stay. Today, they come through those same doors to eat, gather, and experience Martin's vision.
